Purple to Pink Gin Fizz - Ooh la la

A friend and I had the most fresh summer cocktail while baking last night (video soon to come). This one contains pea flower indigo-color gin, sparkling grapefruit juice, and fancy tonic. The gin changes from indigo to pink/purple when citrus hits it. Go grab yourself a bottle of Empress 1908 and share this colorful party trick.


  • 2 ounces Empress 1908 Gin

  • 1 ounce elderflower liquor

  • 1/2 cup grapefruit juice unsweetened

  • 1/2 teaspoon honey or cane sugar

  • basil for garnish


  1. In a shaker, add the honey, elderflower liquor, and grapefruit juice along with ice and shake vigorously so all the ingredients are well-combined and frothy.

  2. Pour into a coup or martini glass.

  3. Slowly top with gin so it creates a separate layer.

  4. Next, slowly top with sparkling rose. It will blend with the gin and create a pretty lavendar color.

  5. Garnish with basil and slice of grapefruit.

  6. Gently stir.

  7. Sip and enjoy!
